Tomatin 'Cu Bocan' Limited Edition Bourbon Cask Single Malt Scotch Whisky
Peated to 15 ppm, this is a gentle, elegant peat, reflective of the mist of the story. This whisky has been aged in former Bourbon barrels, giving the whisky a wonderful vanilla sweetness. On the nose, this dram has aromas of toasted coconut, orange juice, lemon rind, vanilla, burnt sugar and of course, a wisp of peat smoke. The palate is thick and buttery, with a zinging peat, a little thick toffee, some citrus, a touch of vanilla, burnt sugar and roasted nuts. The finish is long and smoky, with faint tropical fruits. Bottled at 46% ABV and without chill filtration, this allows the flavours to ring true. A wonderful dram, with an excellent story – an ideal change of pace for Islay peat-heads.

這個地方人煙罕至、極盡荒涼,每個世代會發生一次地獄之犬攻擊事件,每一次都是令人聞風喪膽。有一天一位酒廠工人很晚時還在外面走動,就曾被一隻強大的黑色怪獸殘酷地追逐著,牠的鼻孔冒出白煙如螺旋般繚繞,牙齒則完全外露。
為了要感受獵犬的濃密獸毛,工人強迫自己把一切自然會產生的恐懼拋在腦後,他停了下來,用顫抖的雙手觸摸獵犬,結果只看到可怕的魅影-庫伯肯,在他眼前逐漸消失,只留下一片完全死寂以及一陣如潑墨藍的煙幕,迅速地穿過泥煤荒地消逝。
Cù Bòcan might sound like one of the fortresses in Lord of the Rings, but it is in fact a reference to a wonderful bit of folklore surrounding the village of Tomatin. Legend has it that the town was beset by the ghostly form of a mysterious hell-hound. One cold, moonlit night, a distillery worker felt compelled to reach out and touch the fiendish beast, only for it to disappear into a wisp of smoke that blanketed the surrounded highlands. It is this smoke-like mist that the whisky recalls.

湯瑪丁(Tomatin)蒸餾廠,位於蘇格蘭幅員最為遼闊的威士忌產區─高地區,山湖相連、風光壯闊的高地區,被譽為是歐洲自然風景最優美的地方,翻越過莫納利亞(Monadhliath)山脈,湯瑪丁便藏身在一片海拔315公尺的綠野茂林中。

湯瑪丁Tomatin,在蘇格蘭蓋爾語中意為“杜松之丘”。19世紀時,這座威士忌大廠在綿連山丘間拔地而起,曾為蘇格蘭規模最大的蒸餾廠巨擘,卻在追求現代化與工業化的速成主義下,一度迷失了傳統與方向,幾經挫折後,湯瑪丁改寫了利益本位的經營之道,以自然共存與工藝傳承,成就湯瑪町威士忌的品味哲學。
湯瑪丁蒸餾廠有著釀製單一純麥威士忌的絕佳條件,高海拔的冷冽氣候,讓威士忌的熟成過程變得緩慢而細膩。來自高山峻嶺的奧特南費斯(Alt Na Frith)泉水,清澈甘美,流經花崗岩石、泥煤和石楠花叢,提供湯瑪丁蒸餾廠優異,微含礦物質的柔軟水源,搭配嚴選、顆粒飽滿的上乘大麥,塑造高地純麥威士忌細緻卻濃郁芳醇的特質。
由調和威士忌轉型為單一純麥威士忌蒸餾廠,湯瑪丁威士忌也做了風味上的轉變,重視酒液的香味與飽和度,採用較長時間的發酵,和使用小型具有長頸的蒸餾器,蘊育出的酒液,具有豐富水果芳香的酯類,與少許的辛香料風味。身為少數自有箍桶業的蒸餾廠,湯瑪丁近年來積極增產首次裝桶(first-fill)的雪莉和波本橡木桶,以釀製高品質、富特色的單一純麥威士忌為使命。
